The Amazonas pepper is a Colombian pepper from the Tabasco family, fruity and very spicy, although not extreme.
The Tabasco pepper comes from the Capsicum Frutescens family, which grows spontaneously in the areas of Mexico and South America and reaches an average height of about 50 cm.
The chilli pepper of the same name has become famous in the world above all for the famous Tabasco sauce, which is obtained by macerating the chopped chillies for 3 years in wooden barrels, with the addition of vinegar.
There are many varieties of Tabasco, but the Yellow Amazonas is the only yellow and its flavor is more fruity on the palate.
The Amazonas Yellow has a scoville rating (SHU) between 60,000 and 80,000 units.
To rule it out, it has a similar spiciness to Cayenne Pepper, and much less spicy than habanero.
It is recommended with meats, fish, shellfish, stews, beans, potatoes and sauces in general.
If used in cooking, it releases maximum spiciness; if you want less spiciness it is recommended to add it only at the end of cooking.
