The King of spices: saffron. Precious, fragrant and rare, it is thought to be a spice already known at the time of Prehistoric times and was used by Greeks, Romans and in biblical lands. It is said that the Romans loved saffron and used it to celebrate the emperor, literally creating a carpet of crocuses.
Although a legend tells that it was the Phoenicians who brought it to Spain, it almost certainly arrived in Europe through the Arabs in the tenth century.
But it is the particular production method that makes saffron so rare and precious: each saffron flower has in fact only three stigmas, which must be picked at dawn, before the sun burns. The stigmas are then selected and dried, a process in which they lose 80% of their weight and intensify their flavor.
